Recap – Dinner II Chef Dominick Cerrone

Lots of buzz that this could have been the best one yet!
Here’s Dom’s complicated,  but elegant menu:
“Hacked” Day-Boat Scallop with Miso and Citrus
Eggplant Caviar in Piquillo Pepper
Ray’s Poached Egg on a Blini,
Borscht Garnish,
Parsley Coulis and Tobiko
White Gazpacho and Honeyed Confit of Rabbit
Seared Black Bass over Pistou of Summer Vegetables
Braised Bradley Pork “en Mojo Boriqueño”
Pickled Ginger Swiss Chard
Coconut Cake with Glazed Lime Chiboust
Hibiscus-Berry Consommé
“Blanco y Negro” Anise Hyssop Ice Milk and “Finca Rosa Blanca” Granita

The meal  thrilled everyone ( how do you perfectly poach 60 eggs????), and even the major rainstorm did not “dampen”the spirits of the diners, chefs and helpers.  Jean Luc Le Du  of LeDu Wines offered outstanding wines.  Once again, thanks to everyone – to family, friends, customers and neighbors for attending the dinner, to Chef Dom for taking on this task during his well deserved vacation from CIA, and a special shout out to the volunteer helpers, without whom we could not pull these off:

Jean Luc and Jennifer for skipping out of  their restaurant Picnic to come up and help
Sam for leaving  Bywater Bistro to help out
John and Risa, Marlene,  Kendra and Liz – you are the best wait staff ever!
Heather and Brad reunited in the kitchen
Paul who  stands by Ray in the kitchen for every dinner thus far,
and Etienne whose photos make everyone feel like they were there!

It takes a village to pull this off, and  somehow we do it every time!!!!
Here’s to the next dinner August 5th!  The bar has been set very high!
